Thursday Dishes- Tortellini Soup



Last weekend after having a rough week and lots of school work I was craving anything comforting and decided to finally try out a new recipe- Tortellini soup! This was super easy to whip together and make for a yummy warm lunch throughout the week. I didn't follow one recipe, more just took inspiration from a few different ones but here's what I came up with...


Ingredients:
1 Onion chopped
Minced garlic
1 Can of crushed tomatoes
Marinara sauce
Vegetable broth
Crushed red pepper flakes
Plain Greek yogurt
Garlic powder
Salt and Pepper
Tortellini


Using a large pot, being by sauteing onion. Once the onion is translucent and well cooked, add the garlic and can of crushed tomatoes, marinara, and vegetable broth. Stir all ingredients together and bring to a boil. Pour ingredients in blender and add a few dollops of greek yogurt. Once soup is well blended, pour back in to pot and bring to a boil. Once soup is boiling, add tortellini and cook for about 10-15 minutes. Top with garlic powder, pepper flakes, and a bit of cheese and you have yourself a yummy soup!
