A New Breakfast Favorite + Starbucks Copy



I am fortunate enough to live just a few blocks away from Starbucks, it makes for the perfect mid week or Friday treat and also times when I don't have time to make breakfast. One of my favorite things to get from Starbucks no matter the time of day is their Egg White Spinach Feta wrap... it is amazing. Not only is it yummy, its under 300 calories! Last week I noticed I had all the ingredients to make a wrap myself and decided I would try it out...


Ingredients:
1 whole wheat tortilla 
3 Egg whites
1/2 cup of frozen spinach
A sprinkle of feta 

Start by cooking your egg whites, I chose to do egg white but this could easily be made by scrambling the whole egg. 
While your eggs are cooking microwave the frozen spinach for 30 seconds to 1 minute depending on how much you use and your microwave power. 
Add frozen spinach into eggs and stir while still on the stove. 
Once your eggs are cooked and well incorporated with the spinach, pour mixture onto tortilla and top with feta! 

This was a super easy breakfast to throw together that I will definitely be making again and could even be added to with different veggies such as tomato or peppers!

Weekend Happenings



Sorry for the delay in the weekend report, from working the weekend and yesterday the only thing I could think about was making it through another work day! This past weekend while I did have to work, I also managed to have quite a bit of fun...

Friday my day off started off with a great run down Monument Avenue. The weather was absolutely perfect and it felt great to be back to running outside. I ended up running a good paced 3 miles and got lucky with a light drizzle at the end of my run to cool me off. 




Saturday was spent working then heading out to meet some friends to celebrate National Margarita day! We went to Jorge'e Cantina, a cute Mexican restaurant located right in the fan just a few blocks from us. The drinks did not disappoint and the food is amazing, especially their avocado fries!


The rest of Saturday was spent around town grabbing drinks at a few more spots in the fan.






Sunday it was back to work followed by relaxing the rest of the night. All in all it was a great weekend but I am so happy to have the day off today to regroup and get myself together for working the rest of the week/this coming weekend. Today will be spent working on my paper for grad school, polishing off some laundry, and hopefully doing a little shopping for a black tie event I have this weekend!

Weekly Round Up





Friday Friday Friday, after this week I did not think I would see the day. This week was long and excuse my french but hellish. I am beyond ready for the day off today before heading back to work Saturday and Sunday. We are supposed to have great weather this weekend in Richmond and I am hoping to get out a bit early both days to enjoy some of the sunshine! The week included long days staying late at work and long nights working on school. Here's a few happenings of the week that I did manage to capture...

 Whenever I am feeling overwhelmed, sad, frustrated, or whatever the emotion may be all I have to do is turn to my left and look at all the love on my wall. I am so lucky to work with such amazing patients. 



And what better way to unwind after a stressful week? Happy hour for one while watching up on Girls!

Desk Space




Desk Space



Now that I am full swing in my class for Grad school, I am finding out I am in serious need of a designated space to do my school work. I easily fall asleep while sitting on my bed and get distracted while sitting at the kitchen table. I have been on the hunt for a small desk to put in my already awkward spaced room. Above are a few I have had my eye on it and honestly, whats a good desk without a few necessary accessories.

Back From A Break



I am officially back to blogging and back to a normal state of health! After 2 weeks of battling strep and a terrible cold, I am happy to say that I am finally feeling like a real person again and have rejoined civilization. Being sick has got to be one of the worst feelings, and last week was no exception especially with the ridiculous amount of cold weather and snow! Also due to working in a hospital and being around so many immune comprised patients, I was given a strict order from my boss to stay away from work. While a few days from work sounds lovely, I was feeling less then stellar and spent most days in bed or on the couch. Finally by the end of the week I was feeling better and ventured out a bit. Let's catch up in pictures to make this update a bit easier...

The beginning of last week I was feeling valentines festive and used Ashley's recipe again but this time used raspberries instead of blueberries. They were absolutely delicious and I am already looking forward to making them again!



 On one of the days I did manage to get to work I broke out my new planner and went to town planning my spring away. Talk about weddings and weekend trips- can't wait for the warmer weather!




Excuse the snapchat version but one of my best friends moved to San Francisco last week! She previously lived in Connecticut and even though I hardly saw her before the move, I am already missing her desperately but eagerly planning my trip out to visit her!




 After days of laying around in bed with a cough, sore throat, and serious stuffy nose I was in need of a serious pick me up. Enter my Friday afternoon of getting my roots done and enjoying a glass of wine while doing it. 




I also made it out to have a drink with a few friends from college that were dominating their way through a bar crawl. While I did not participate in the full bar crawl, it was great to get out of the house and see friends!

It would appear as though my immune system is broken yet again and I am currently buried underneath a pile of covers with tissues and tea. I will be taking a break for the next few days to rest, recuperate, and hopefully get back on my feet in the next few days.

Friday Five





  I am so happy Friday is here and that one of my best friends will be traveling to Richmond for the weekend! This week was filled with busy days at work, quick gym sessions and babysitting most evenings, plus working on grad school papers... gross. It will be a great weekend filled with catching up, wine, shopping, and relaxing.

Last night I headed out with a few friends to catch Railroad Earth at the National. The concert was absolutely amazing and although a little past my bedtime for a week night, made a great start to the weekend!

This was my new breakfast of choice for the week- ezkiel bread with avocado and plain yogurt with blueberries and granola. Super yummy but also healthy and filling!

I spent most evenings this week with these two cuties. William, the younger one fell asleep while watching Finding Nemo and Christopher was kind enough to rub his back... too cute.

Yesterday my sorority celebrated my chapters birthday! I am beyond thankful to have joined such a wonderful organization that allowed me to meet so many amazing ladies that have become my best friends.

As I mentioned earlier, one of my best friends will be coming in town this weekend and I could not be more excited for a little girls weekend. Tonight we will be heading one of my favorite spots, Pearl for snacks and drinks before heading out for the night. Tomorrow will be spent sleeping in, a little shopping, and some site seeing around Richmond! Here's to a great weekend ahead!

A Weekend with Nothing To Do



This past weekend I was beyond excited to finally have a weekend in town AND with no plans, it was quite the treat and left me wanting to make my weekends plan free all the time! 

Work on Friday was absolutely insane and I couldn't think of any better way to end the day or kick off the weekend then head out for happy hour.

 A few girls from work and I headed to Pasture and had a great time catching up and blowing off steam from the crazy day, not to mention their yummy snack selection and happy hour wines. 


Saturday was pretty lazy which I was totally OK with and didn't mind leaving my house until close to 4... yea one of those days. Saturday night included checking out a new gastro pub with a friend and then heading to another friend's house for wine, cheese, and more catching up. 

Due to all my laziness on Saturday I woke up Sunday ready for the day with an action list: grocery shop, go for a run, and try a new recipe all before having to babysit at 2. 


Of course on my run I headed to one of my favorite Richmond spots- The Duck Pond. It was my first outdoor run in a long time but it felt amazing and ended up being about 3 miles, not too shabby. 


Once I got home I showered and decided I had a little extra time and finally tried out Ashley's Blueberry Oatmeal muffins! These turned out absolutely amazing and have made for such an easy grab and go breakfast this week!

The rest of Sunday included babysitting then heading out to meet a few friends for the Super Bowl. Overall it was a great weekend and just what I needed after multiple weekends away and a few sick days.
