Weekend Recap

This past weekend I celebrated St. Patrick's Day by going to a few different happenings in Richmond. We started our morning with green mimosas and cinnamon rolls and headed out to Shamrock The Block where we enjoyed a few beverages and live music. The weather was perfect, warm, and sunny and made for a great day outside. A local band, Three Sheets To The Wind was also playing at a downtown bar and if you have seen them before, you know they are hard to pass up. We ended our marathon day by a little outdoor music and hard to believe but more beverages. Here's a few snapshots of the weekend...

It was such a fun day and although I loved celebrating St. Patrick's Day, the weather was by far my favorite part. Here's to hoping for warmer temps by the end of this week!

Dying to try this recipe for broiled grapefruit.

Emily from Cupcake And Cashmere take on how to get the best blow dry.

An interesting article on the 10 things you can do to advance your career.

A quote that has been lingering in my mind this week.

Happy Friday loves!

Thursday Dishes- Tortellini Soup

Last weekend after having a rough week and lots of school work I was craving anything comforting and decided to finally try out a new recipe- Tortellini soup! This was super easy to whip together and make for a yummy warm lunch throughout the week. I didn't follow one recipe, more just took inspiration from a few different ones but here's what I came up with...

Ingredients:
1 Onion chopped
Minced garlic
1 Can of crushed tomatoes
Marinara sauce
Vegetable broth
Crushed red pepper flakes
Plain Greek yogurt
Garlic powder
Salt and Pepper
Tortellini

Using a large pot, being by sauteing onion. Once the onion is translucent and well cooked, add the garlic and can of crushed tomatoes, marinara, and vegetable broth. Stir all ingredients together and bring to a boil. Pour ingredients in blender and add a few dollops of greek yogurt. Once soup is well blended, pour back in to pot and bring to a boil. Once soup is boiling, add tortellini and cook for about 10-15 minutes. Top with garlic powder, pepper flakes, and a bit of cheese and you have yourself a yummy soup!

Life Lately

Sorry for the silence last week yall, I had my biggest paper of the semester due, combined with working back to back weekends and this girl was tired. My paper is officially turned and I will have the next few weekends off thank goodness! Here's a bit of whats been going on lately...

This past week I could not get enough kale! I made it twice and loved it each time!

Attended Shannon's Cario Ride at Boho Cycle Studio and could not have had a better time! There was a dj and glow sticks... I was sold.

Whipped up a yummy sandwich while I was babysitting one day- whole wheat toast, hummus, arugula, and tomato... yum!

Also finally got around to making Tortellini soup, recipe to come this week!

Like I said last week was crazy busy but I am looking forward to an easier week this week filled with more cooking, a few workouts, and relaxing! This past weekend I stayed in both nights and could not have been more happier that I did. I worked both Saturday and Sunday and was asleep both nights before 11 and feel so rested! I did some cooking, watched movies, including a new Netflix gem- Love and Other Disasters, a really cute British comedy and really just relaxed. Everyone needs one of those weekends once in awhile.

Hope everyone had a great weekend!

Emily
